Zesty Moroccan Beef Tagine with Apricot Couscous

Ingredients
- 1.5 lbs beef stew meat
- 1 medium onion, diced
- 4 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1 14oz can crushed tomatoes
- 1 cup beef broth
- 1/2 cup dried apricots, chopped
- 1 cup couscous
- 1 cup water
- 2 tbsp honey
- 1 tbsp lemon zest
- 1/4 cup fresh parsley, chopped

In a large Dutch oven or heavy pot, brown the beef over medium-high heat until no longer pink, about 5 minutes. Transfer to a plate.

Reduce heat to medium, add the onion and cook for 3-4 minutes until softened. Add the garlic and spices and cook for 1 minute until fragrant.
