Zesty Moroccan Chicken Tagine with Roasted Cauliflower and Farro

A fragrant Moroccan-inspired chicken tagine simmered in a flavorful tomato-based sauce, served over a bed of hearty farro and roasted cauliflower florets. This high-protein, high-fiber meal is perfect for supporting GLP-1 medication.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, trimmed of excess fat
- 1 medium onion, diced
- 3 cloves garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 0.5 tsp cinnamon
- 1 15oz can crushed tomatoes
- 1 cup low-sodium chicken broth
- 1 cup farro, dry, uncooked
- 4 cups cauliflower florets
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 0.25 cup fresh parsley, chopped

Preheat oven to 400°F. Toss the cauliflower florets with 1 tbsp of olive oil and spread on a baking sheet. Roast for 20-25 minutes, until tender and lightly browned.

In a large skillet or Dutch oven, heat the remaining 1 tbsp of olive oil over medium-high heat. Add the chicken thighs and cook for 3-4 minutes per side, until browned. Remove chicken from the pan and set aside.
