Zesty Moroccan-Style Chicken Tagine with Garlic Couscous

Tender chicken thighs simmered in a fragrant Moroccan-inspired tomato and vegetable sauce, served over fluffy garlic-infused couscous for a satisfying family-friendly dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 1 14.5 oz can diced tomatoes
- 1 cup chicken broth
- 2 medium carrots, peeled and diced
- 1 medium zucchini, diced
- 2 tsp Moroccan spice blend
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup couscous
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 4 lemon wedges, for serving

In a large skillet or Dutch oven, heat 1 tbsp olive oil over medium-high heat. Add the chicken and cook for 3-4 minutes, until lightly browned on all sides. Remove chicken to a plate.

Add the remaining 1 tbsp olive oil to the pan. Sauté the onion for 3-4 minutes until translucent. Add the garlic and cook for 1 minute until fragrant.
